Q. What is the best way to store Miyoko’s Creamery cheeses?
A. As a general rule, all of the cheeses will keep up to 180 days under refrigeration; the “best by” date is stamped on the back of each box, and differs according to the cheese. If you want to keep your cheese longer, however, you can always freeze them.
The cheeses that are best kept in the refrigerator are the Smoked Farmhouse, Sharp Farmhouse, and Rustic Alpine, which will continue to age and become firmer over time. While freezing will not affect quality, your cheese won’t improve in flavor or texture, either (in other words, it will remain unchanged).
Double Cream Chive, Sundried Tomato, and the newly formulated Winter Truffle freeze beautifully, which helps if you are going to travel with them. If you plan to keep them for longer than the recommended shelf life, it’s a good idea to stick them in the freezer.
While the Loire Valley, Black Ash, and Herbes de Provence can be frozen, it’s best just to keep them refrigerated and consume them within their shelf life.
Q. What cultures do you use? Are they vegan?
A. We use proprietary cultures that do not contain any animal products. Yes, they are vegan!
Q. What is nutritional yeast, and does it contain MSG?
A. Nutritional yeast is an inactive yeast grown primarily for nutritional purposes. It is high in protein and B vitamins, including B12. It is common in vegan cuisine and products, as it contributes to an overall cheesy flavor and adds umami. Nutritional yeast products do not have any added monosodium glutamate; however, all inactive yeast contains a certain amount of free glutamic acid because when the yeast cells are killed, the protein that comprises the cell walls begins to degrade, breaking down into the amino acids that originally formed it. Glutamic acid is a naturally occurring amino acid in all yeast cells, as well as in many vegetables, fungi and meats.
Q. I left my cheese in the refrigerator for a little longer than recommended. I noticed a fluffy white spot of mold. Can I just scrape it off and still eat it?
A. Yes. White mold is not harmful, and is in fact the mold used for Brie and other bloomy rind cheeses. It is primarily an aesthetic concern.

Q. A lot seems to go into shipping your products. Is any of the packaging (freeze packs included) recyclable? How about the packaging for your cheeses, wrapping and outer box?
A. YES! We spent a lot of time finding eco-friendly packaging that will keep your products cold. The box and the insulation are both recyclable! As for the gel packs, please refreeze and use them again.
